A specialty coffee from the Sidamo region of southern Ethiopia, grown at 2,300 metres above sea level from local heirloom varieties together with the 74158 variety. It has been through a natural anaerobic process: the whole coffee cherries ferment in sealed tanks without oxygen for 72 hours, then dry with the fruit still around the bean.
The result is a floral, fruity cup, where the aroma of white flowers meets flavours of berry, mango and banana.
How to brew it
This is an Omni roast, made to work for both espresso and filter. Pull it as an espresso or a cortado, or brew it by hand in a V60 or Chemex to bring out its floral notes most clearly.
